Zucchini Boats!

This is something I used to make a while back. Thought I'd re-create it W30 style. Here’s how: browned ground beef and onion, then drained and rinsed it. Added shredded sweet potato and Trader Joe’s no-sugar marinara sauce and cooked for a little bit longer. Scooped out halved zucchinis, added a little olive oil and baked in oven for about 10-12 min. Removed them and added the meat sauce, topped with nut crumbs (pistachio and cashews in Vitamix), and broiled the loaded boats for about 4-5 min, along with some asparagus “oars”. In the meantime, I spiralized some yellow squash to make the “ocean,” and sautéed them in a pan with EVOO. Served with a mango, banana, pineapple and blueberry fruit salad. Kids loved it. So delicious! ❤️❤️❤️
