Sweet Potato Taco Shells
with Carnitas, Guacamole, Salsa & Cilantro
IT’S TACO FRIDAY at the CRAZY J RANCH and I am in HEAVEN!! I saw a pic of a shredded sweet potato taco shell on somebody’s Instagram a week ago or so. Had to try it. I am here to tell you it’s the BEST THING EVER. Didn’t miss the shell at all!!!! Made the taco with carnitas, guacamole, salsa, and cilantro. THEN I REMEMBERED Krysten's Kitchen has a recipe for cashew cream, which takes the place of sour cream. Whipped that up (super easy) and drizzled it on top of a sweet potato tostada. THIS is what we’ll be eating every TACO TUESDAY from now on. Delicious!!
