You'll Thank Me Later: ❤️ Love at First Bite ❤️

Instead of blogging something about how much I love my husband, (which I totally do–don't get me wrong), I decided to post something my husband (and our family) loves. How's that for a twist? ❤️


Taco Soup. What's not to love? This is definitely one of our family's favorite recipes, our stand-by, our "go-to" when unexpected company arrives or when a family is needing a crockpot dinner dropped off. My mother-in-law gave this to me soon after the wedding. ❤️ Takes little to very little time to make–especially when you follow the tips at the bottom. People love it and ask for the recipe. (Yeah, that is not my picture above–it's a stock photo I purchased–but our soup looks pretty darn similar, minus the veggie chips.) This recipe even won the coveted "Best Chili" award at Grace Church a few years back. All I did was made it with less water. Ta-da! 😂 Hope you enjoy it! Happy Valentine's Day! ❤️


CRAZY J TACO SOUP

3-4 lbs ground beef - cooked with onion; drained, rinsed 🐮

1 medium onion, diced (cook with meat)

1 28oz can Diced Tomatoes - do not drain 🍅

1 15 oz can Tomato Sauce 🍅

1-2 cups frozen corn 🌽

2 lg cans of beans you love (Kidney, Black, Pinto, etc) - do not drain

2-3 oz of your favorite Taco Soup Mix - to taste

2-4 cups water, depending on how thick you want it to be 💧

topping:

grated cheese 🧀

crushed tortilla chips

sour cream (optional)

Throw everything (except toppings) in a large pot and cook on medium heat. Or, throw everything (except toppings) in a crockpot and heat on high for 2 hrs or low for 4, or however long you choose. Doesn't matter, as long as it's warm when you eat it, ha. (Make sure you cook ground beef first, as mentioned above). Dish out into bowls, throw on the toppings. Yum! Love at first bite! ❤️❤️❤️

(Serves a bunch, maybe 10? And if it's not enough, add more water!)

Tip: I usually find ground beef on sale, cook it up with onion, (drain, rinse), and throw it in a gallon freezer Zip-Loc bag and put it in the freezer. And when I find the beans, tomatoes, etc on sale, I grab those, too, to have on hand. This way it is super easy to throw this together when needed.
